Double-Decker Chicken Pizza

This double-decker chicken pizza has become a staple supper for my husband & me. We like our pizza with more toppings & less dough because toppings are the best part! It’s really quick to put together & it’s delicious. What more could you ask for?

Pizza Ingredients

The first thing I do when getting ready to cook is gather the ingredients. I like to cook the chicken myself, but you could use a shredded rotisserie chicken or the frozen pre-cooked kind. I use either boneless skinless breasts or thighs. My favorite seasoning for this is Weber Roasted Garlic & Herb Seasoning. I also add this the pizza dough if I’m making it from scratch!

To get that grilled flavor without cranking up the grill, I use an indoor grill similar to this one. Mine is the same brand, but I think it’s just an older model because it only has one knob.

If I have the time, I like to make this Whole Wheat Herbed Pizza Dough recipe from Once a Month Meals. I do use plain flour & add the seasoning from above in place of the ones in the recipe. The recipe makes enough for two pizzas & can be frozen. When I’m in a pinch, I use Mama Mary’s 12″ Thin & Crispy Crust, which is what’s in the picture!

For the sauce, I usually use whatever pasta sauce I have on hand. The picture shows Gold Emblem Abound Pasta Sauce, a brand by CVS Pharmacy. It’s organic & they tend to have good sales on that brand. Some of my other favorites are Newman’s Own Sockarooni or just plain Contadina Crushed Tomatoes.

Besides those ingredients, I usually grab some shredded & whole mozzarella as well as whatever veggies I have on hand! My favorites are spinach, mushrooms, peppers, & onions. Sometimes I add other cheeses as well.

Stack it Up

Once everything’s gathered, diced, & shredded, it’s time to stack it up! I start with the sauce & keep it kind of thick, then add a layer of chicken.

Next comes some sliced, whole mozzarella, a layer of veggies, & shredded cheese.

I’ll add layers of chicken, veggies & cheese until I run out of ingredients! That’s the double-decker part! I may even add some more sauce between the layers. : D

When it’s all stacked up, I pop it in an oven preheated to 350 degrees for 15 to 20 minutes. The homemade dough can take 5 or 10 minutes longer to get nice and crispy. Then you have melty goodness!

Mmmm! So delicious! We had pizza with a homemade crust Tuesday night & I ate way too much! I also made some homemade pizza rolls for my students last day of class. I think my son was a little jealous when I told him about it! ; )
